One of my favourite salads to eat when dining out is a Chicken Caesar Salad. For some reason, not many restaurants in our area have it on their menu, and I have been craving one lately, so I decided to make my own. It was so delicious I had to share the recipe!
Chicken Caesar Salad Recipe
This Chicken Caesar Salad is definitely a recipe you need to add to your summer entertaining repertoire. It is perfect for long lazy lunches with friends just add a perfectly chilled glass of your favourite vino. For the recipe video, visit my Instagram page.
The Salad
Ingredients:
- 2 Heads cos or gem lettuce washed & dried – only chop half the leaves and set aside.
- 1 Cup baby spinach washed and chopped.
- Two skinless chicken breasts.
- Four rashers streaky bacon.
- Cup grated mature cheddar or parmesan cheese
Method:
Season 2 chicken breasts with cayenne pepper, cajun seasoning, salt and pepper, then marinade them in plain yoghurt, olive oil, coriander pesto and lemon juice. I like to grill the chicken on a gas Weber, but you can also pan-fry it.
Chop the bacon and pan fry until crispy. (You can also cook in the oven or air fryer)
A Caesar salad would not be complete without croutons! I made my own by tossing cubes of sourdough bread in olive oil, salt and pepper. Pan-fry or cook in the oven until golden and crispy.
The Dressing
Ingredients:
- 1/2 Cup mayonnaise.
- 1/2 Cup plain yoghurt.
- 1 to 2 Garlic cloves crushed.
- Juice of 1 lemon.
- 1 tsp Dijon mustard.
- 2 tbsp Worcestershire sauce.
- 1/2 Cup freshly grated mature cheddar or parmesan cheese.
- Salt & pepper to taste.
Method:
Combine all the ingredients for the dressing in a jug and blend until well-mixed. Check the seasoning and set aside. (I left the anchovies out of the dressing recipe because I am not a fan.)



To compile the Chicken Caesar Salad, start with a layer of the whole salad leaves, then add chopped lettuce and spinach. Next, add sliced chicken, bacon and croutons. Pour over the dressing and garnish with grated cheese. Finish with a squeeze of lemon juice. ENJOY!
