Summer has officially arrived in the Cape, which calls for light and refreshing meals and alfresco dining. My simple yet delicious recipe for bacon wrapped asparagus spears is a great appetizer or a side dish. Pair it with a few glasses of the Garden Route Sauvignon Blanc, and you have the perfect summertime dish!
Bacon Wrapped Asparagus
The wine pairing: The Garden Route Wines Sauvignon Blanc. On the nose, you can expect aromas of fresh green pepper, cut grass, fynbos, passion fruit, and guava. The palate delivers fresh tropical fruits and green pepper, finishing with a mineral flinty note and fresh acidity.
Bacon Wrapped Asparagus Recipe
Ingredients:
- 2 Punnets of asparagus spears
- 2 Packets of streaky bacon or pancetta
- 1/4 cup shaved parmesan
- Lemon-infused olive oil (you can also use regular olive oil)
- 1 Lemon
- Basil leaves for garnish
Method:
Preheat your oven to 250°C. Wash your asparagus spears in cold water and trim the ends. Pat the asparagus dry with kitchen towel, then season with salt and pepper and drizzle with olive oil.
Wrap a slice of streaky bacon or pancetta around each asparagus spear. Start at the bottom and work your way up. Line a baking tray with foil and place a wire rack on top. Then, put the bacon-wrapped asparagus spears on a wire rack.
Bake in the oven for 20-25 minutes or until the bacon is crispy. Remove from the oven. Place on a serving plate and shave over parmesan cheese. Then drizzle with the olive oil and serve with lemon wedges. Accompany with chilled Garden Route Wines Sauvignon Blanc for the perfect pairing.
