I absolutely love the salty smokey flavour of bacon – add mushrooms, garlic and cream I am in heaven! If these are flavours you like then this Bacon Mushroom Pasta Recipe, is just for you! It is definitely not a low-carb meal but everything in moderation is acceptable.
Bacon and Mushroom Pasta Recipe
A great tip I have for cooking bacon is to do it in your oven, instead of frying the bacon in a pan. You get rid of a great deal of the fat by cooking it in the oven, as it renders down really well and you get the most awesome, crispy bacon!
Ingredients
- 500g Mixed Mushrooms
- 2 Packets Smoked Back Bacon
- 2 -3 garlic cloves(crushed or finely chopped)
- 1 Tbsp. Thyme
- 300ml Reduced Fat Fresh Cream
- Juice of ½ a lemon
- ½ cup grated parmesan cheese
- 125ml White Wine
- Salt and pepper to taste
- 50g Butter
- Olive Oil
Preheat your oven to 180ºc and lay your bacon pieces on 2 foiled baking sheets. Chop your garlic and Thyme and slice your mushrooms. Once your oven is preheated place your trays of bacon into the oven, turning during cooking. Cook until crispy and golden.
In a pan heat your olive and butter over a medium heat, until bubbling, add your garlic and Thyme and saute for a minute or two. Just before the butter starts to colour add your mushrooms and a generous grind of salt and pepper. Cook over a medium heat until the mushrooms start to colour.
Once your bacon is cooked remove from the oven and slice into small pieces, set aside to add to your sauce later. Place a pot of salted water on a high heat and bring to the boil. Once it reaches a rolling boil add a glug of olive oil and add your penne pasta, cook for approximately 8-9 minutes.
Add your white wine and lemon juice to your mushrooms and simmer for 5-10 minutes to allow the wine to reduce. Remove the pan from the heat and add your fresh cream, return to a low heat and do not allow the cream to boil. After approximately 5 minutes add your bacon pieces and grated parmesan, stir to combine. Add your penne pasta to the pan and toss in your creamy sauce.
To Serve
Serve immediately with a sprinkling of parmesan cheese and thyme leaves. You can accompany your pasta dish with crispy ciabatta bread and a healthy salad.
