I have been thinking that a recipe is long overdue. Chicken, Avo & Rocket Tortilla Wraps are a regular feature on our dinner menu. The kids love it and best of all it is easy! You really can adapt it to your own personal taste but I find that this recipe is both tasty and healthy!
Chicken, Avo & Rocket Tortilla Wraps
Ingredients:
- 500-800g Skinless Chicken Breasts ( Amount dependant on how hungry the troops are)
- 1-2 Green Peppers (Depending on their size) sliced
- 1 Red Onion Sliced
- 1 Tin Whole Tomatoes
- Cajun Spice
- 1-2 Fresh Limes or 1 lemon
- 1-2 Fresh Chillies or 1-2 tsp. chilli paste ( Depending on how hot you would like it)
- Salt & pepper to taste
- 2 tsp. Sugar
- 1-2 Tortilla’s wraps per person
- 1-2 Avocados
- Rocket or gem lettuce
- Bulgarian yoghurt
- Grated cheddar or Gouda cheese
- Olive oil
Method
Slice your green pepper and onion first – I like mine thinly sliced. Once you have prepped the veggies you can thinly slice your chicken breasts and dust them with the Cajun spice, I also like to add a bit of extra dry chilli for a bit of a kick!
Heat the oil in a large pan and add the garlic, chopped chilli and red onion to the pan – saute over a medium to low heat for a few minutes, do not brown the onion, just allow it to soften. Then add the green pepper and cook for a further few minutes until they are just softened. Remove the pan from the heat and set the onion and peppers aside.
Add a bit more oil to the pan and add the chicken in batches and brown over a high to medium heat. Put all the chicken back into the pan and add the cooked onions and green peppers. Then add the tin of whole tomatoes and simmer over a low to medium heat for approximately 10 minutes.
Once the tomatoes have softened add your sugar and the juice of 1-2 limes, depending on your taste. Add salt and pepper to taste and simmer for a further 5 minutes. This is a good time to put your tortillas in the oven to heat up, follow the instructions on the packaging.
Once your tortillas wraps are warm, place on individual dinner plates and begin filling it, I usually like to start with the rocket, then the chicken and pepper mix, followed by the avo, cheese and yoghurt. If you are watching the calories then replace the cheese and avo, with chopped tomato and cucumber or a relish or chutney, for extra flavour.
Then wrap your tortilla, there are many schools of thought on how to do this, my main aim to keep all the filling from falling out!
